Here it is, the end of August. Wah, Wah, Wah.
We all knew this time would come, but did we really expect it to come this fast? No. Don’t get me wrong, I’m excited for the cute boots, coats, and hats that come with the Fall and Winter season. But I’m just not ready to throw the bikini in the drawer…
Okay, enough of that, let’s get down to business here with a little liquid confidence to get our weekend started off right. I know we all love to imbibe on our weekends. Especially with refreshing libations when the weather is so hot (like it is going to be here in Laguna Beach — [90 degrees F] [32 degrees C]), surrounded by your GF’s (and BF’s).
My favorite way to make cocktails is to start fresh, not adding any refined sugars, and keeping your ingredients simple. I call my cocktails “skinny” cocktails because I focus on the fruits (or vegetables) that go into them adding a bar spoon of honey or agave if need be.
I’ve created four seasonal, organic, skinny style cocktails to share with you with the liquor ingredient being either vodka or tequila (since I love my tequila in the summertime). But most of these cocktails can also be made with rum and gin, keeping it open to your preference.
First, let’s get down to the Skinny Bar Essentials. Always keep your bar stocked with a:
- Boston Shaker
- Organic Agave
- Organic, Raw Honey
- Organic Lemons
- Organic Limes
- Your Favorite Spirits
A few of my choices for mixing drinks include:
- Milagro or Azul Tequila
- Tito’s Vodka
- Bacardi Rum
- 209 Gin
- Bulleit Bourbon

On to the libations…
Skinny Strawberry Basil Lemonade
Strawberries in my cocktails always make me happy. They are so naturally sweet, full of antioxidants and not too expensive. I always reach for the organic options, since it is such a porous fruit, meaning these little powerhouses will absorb any pesticides, fertilizers or whatever chemicals they use on non-organic types.
3 Medium Strawberries — Muddled
1/2 of a Large Lemon — Juiced (about 1 oz. of juice)
2 Large Basil Leaves — Ball them in your hand, give them a smack, and drop them in your shaker
1 Barspoon of your Honey
1.5 – 2 oz. of Vodka (Rum and Gin also go well with this drink!)
.5 oz. of St. Germaine Elderflower Liquor (OPTIONAL)
.5 oz. of Dry Champagne
Combine all of the ingredients in your Boston Shaker and shake with ice. Strain drink over ice and top with a splash of champagne.
Garnish with fresh basil leave, lemon wheel, and strawberry.
The Green Flash
“Green flashes and green rays are optical phenomena that sometimes occur right after sunset or right before sunrise.”
For this drink, we are going spicy and tropical combining jalapeno and kiwi for a sweet escape.
- Aid in weight loss because they contain a chemical known as capsaicin that is a thermogenic food, meaning it helps you burn calories and fat
- Are chock-full of antioxidants
- Help prevent cancer, lower blood pressure, are anti-inflammatory, and protect the heart
- Fight free-radicals
- Boost collagen production
- Act as a pre-biotic
- Maintain your weight
- Are full of antioxidants and fiber, including Vitamin C & E
- Prevents muscle soreness
- Promotes a healthy immune system
1 Slice of Jalapeno — Muddled (When choosing your slice, remember the slices towards the stem will be the spiciest).
1/2 of a Kiwi — Muddled (Skin on is okay).
4 Mint Leaves — Ball and Slap Method
1 oz Fresh Lime Juice (about 1/2 of a lime, juiced)
1 Barspoon of Organic Agave
1.5-2 oz. of Tequila (Vodka also works well with this drink!)
Muddle your jalapeno first, and then your kiwi. “Ball and slap” your mint to release the oils and drop in your Boston shaker. Add your fresh lime juice, organic agave, and tequila; shake and strain over ice.
Garnish with a lime wheel and mint leaves.
We all know watermelon is the summer mascot of fruit, and it is easy to make a delicious, refreshing cocktail to please a crowd with its hydrating, sweet juice! I add a little fresh grapefruit juice and garnish with edible flowers, for a little more POW.

- Aids in digestion and weight loss
- Help with hydration

- Reduces cellulite
- Boosts immunity
3 Large Chunks of Watermelon — Muddled
1/2 Of a Grapefruit — Juiced (About 1.5 ounces)
1 Barspoon of Organic Agave (OPTIONAL)
A Squeeze of Lime
1.5-2 oz. of Tequila (or vodka)
Edible Flowers (OPTIONAL)
Muddle the watermelon in your Boston Shaker, add grapefruit, lime (and agave if you used it) along with your tequila. Shake and strain over ice.
Garnish with grapefruit slice and edible flowers.
This last drink I made with a fresh squeezed energy juice I had bought from Whole Foods made with fresh beet, apple, lime, and grape juice. All of these juices are high in antioxidants, seasonal to summertime, and hydrating. My favorite health benefit about beets is that they fight cancer and are a natural energy source (way better than red bull), not to mention the beautiful fuschia color you get from them!!
1.5 Ounces of Fresh Squeezed Juice
1 Squeeze of Lime
1.5-2 oz of Tequila (Vodka works great, too!)
If you want to add a little extra deliciousness to your drink, muddle some mango in your Boston Shaker to start. Add the rest of your ingredients to your tin; shake and strain over ice. Garnish with a mango chunk.
Alright, there you go four cocktails to end your summer right, full of healthy and delicious ingredients. Remember, to make a skinny cocktail you must always start FRESH, the little extra work goes a long way (and tastes WAY better).
